  • Legislation.

We also deliver Level 2 Award in Food Safety in Retail  / Manufacturing

This course is vital for managers and those with a supervisory role and will help them to comply and implement changes in Food Hygiene legislation which came out in January 2006; chiefly devising, implementing and supervising food safety management systems

LEVEL 4 AWARD IN MANAGING FOOD SAFETY IN CATERING or MANUFACTURING

This course is designed for: managers and supervisors and senior hygiene personnel.

Outline programme 

The qualifications cover the following topics:

  • Bacteriology

  • Food-borne illnesses

  • Physical contamination of food

  • Food storage, temperature control and preservation

  • Design and construction of food premises and equipment

  • Cleaning and disinfection

  • Pest control

  • Personal hygiene

Duration: 5 day programme plus exam morning

Can be undertaken via a mixture of home study and tutor support on zoom

Assessment: Written questions to answer in a two and a half hour examination

Nutriton -  LEVEL 2 AWARD IN HEALTHIER FOOD AND SPECIAL DIETS 

ThIs one day course is concerned with the basic principles of nutrition, and has as its focus the key role of nutrition in health (defined as the prevention of disease). The qualification will be of interest to candidates involved in catering, food and health-related occupations, and also to carers, community workers, fitness trainers and other individuals that have a role in the promotion of health. The qualification's learning outcomes cover the role of a healthy diet in relation to health, the nutrient content of different foods and diets, how food processing affects the nutritional quality of food and how a nutrient deficiency or excess can contribute to ill health.

  • Composition of a balanced diet

  • Nutrient content

  • Food processing and food quality

  • Nutrient deficiency and excess

LEVEL 1 AWARD IN NUTRITION

This half day Level 1 Award in Nutrition course has been designed to provide a good, basic understanding of nutrition.
Who needs this qualification? This qualification will be useful as induction training in catering environments, for employees who are involved in the selection of menus, recipes and ingredients. It will be equally relevant for the hospitality, leisure, education, health and community care sectors.
